Rebel Recipes - Christmas Leftover Buffet

Ingredients

  • Leftover cauliflower cheese fritters:
    Fritter batter: 
    - 150g chickpea flour
    - 1 tsp sea salt 
    - 1 tsp garlic powder 
    - Black pepper
    - 2 tbsp nutritional yeast
    - 150ml water
     
    - Leftover cauliflower cheese florets.
    - 3 tbsp olive oil
  • Stuffing Muffins:
    For the batter;
    - 150g self raising flour
    - 1 tsp Baking powder 
    - 1 tsp sea salt
    - 1 tsp oregano 
    - 2 tbsp olive oil
    - 1 tbsp apple cider vinegar
    - 200g water 
     
    - Leftover stuffing
    - Cooked chestnuts chopped up
    - 6 tbsp dried cranberries 

Leftover cauliflower cheese fritters

  1. Add all the batter ingredients to a large bowl. Mix well to combine.
  2. Pre- heat some oil in a non stick pan and dunk florets of the leftover cauliflower cheese into the batter, try and coat it really well.
  3. Transfer to the pan and fry on all sides. 

Stuffing Muffins

  1. Pre heat oven to 180c
  2. Firstly make your batter by adding all the dry ingredients to a large bowl and mix to combine
  3. Now add in the wet ingredients and mix well to combine
  4. Line a muffin tin with cases - this make 6
  5. Spoon a little leftover over stuffing into the base of each case and add a few cranberries and a sprinkle of cooked chopped chestnuts
  6. Now spoon half the batter over to mostly cover the stuffing, cranberries and chestnuts.
  7. Repeat by adding another layer of the stuffing, cranberries and chestnuts and a layer of the batter
  8. Sprinkle a few more cranberries over the top
  9. Bake for approximately 22 minutes then remove from the oven.
