Chocolate & Blueberry Muffins

Deliciously moist and fluffy bakery style muffins full of Blueberrys and chocolate chunks.


  • 250g self raising flour
  • 1 tsp bicarbonate of soda
  • 140g blueberries
  • 100g white chocolate chunks
  • 80g caster sugar
  • 2 eggs, beaten
  • 100g butter melted
  • 150ml natural yoghurt
  • 12 hole muffin tin and muffin cases


1. Line muffin tin with paper muffin cases.
2. Place flour & bicarbonate of soda in a mixing bowl and mix thoroughly.
3. Stir in the blueberries, sugar and chocolate, add beaten eggs, yoghurt & butter then stir to combine. It doesn’t matter if the mixture looks lumpy as over mixing will cause them to be tough.
4. Fill the muffin cases with the mixture, place in a cold oven, Low Humidity at 180°c for 20-25 minutes. Alternatively select SteamBake™ at 180°c then bake for about 20 minutes. (If using SteamBake™ remember to add water and preheat for 5 minutes before baking the muffins).
