Austrian empanadas with chive dip

Ingredients
For 12 empanadas:
- 400 g pumpkin cubes, fresh or frozen
- 5 pork sausages
- 100 g grated mature cheese
- 2 rolls of savory pie dough
- 1 handful of chives (about 10 g)
- 200 ml crème fraîche
Preparation
- Preheat the oven to 180 degrees.
- Boil the pumpkin cubes for 15 minutes.
- Meanwhile, cut the snack sausages into small pieces and finely chop the chives.
- Fry the sausage pieces for 5 minutes in a dry frying pan.
- Drain the pumpkin cubes and mash coarsely.
- Stir in the cheese along with the fried sausage pieces, 1 tbsp crème fraîche, a quarter of the finely chopped chives, and a generous pinch of salt and pepper.
- Roll out the dough and cut out shapes using a pastry ring or small bowl with a diameter of 8 to 10 cm. Form the remaining dough into a ball and roll it out again. In total, you can make about 12 empanadas.
- Spoon a tablespoon of pumpkin filling onto one half of each dough round. Fold the other side over the filling and gently press closed with a fork.
- Drizzle with some oil, slide into the oven, and bake for 20 minutes.
- Mix the remaining crème fraîche with the remaining chives and a pinch of salt and pepper to make a dip.
