Edd Kimber is a food writer based in London, and is one of the UK's most popular bakers. He is the author of such books as his smash hit, One Tin Bakes and the Sunday Times bestselling Small Batch Bakes, and his new book Chocolate Baking. Over the last ten years he has appeared on multiple television shows including as a resident baker on The Alan Titchmarsh Show, on Good Morning America, Sunday Brunch, Saturday Kitchen and of course on the original series of The Great British Bake Off, of which he is the inaugural winner.

How to get the best results from your bakes
  1. "Always read the recipe a couple of time before starting" - It might seem obvious but properly familiarising yourself with each step of the recipe can make the process run smoother and with less stress.

  2. "Weight out your indgredients before starting!" - Similarly to reading the recipe measuring out your ingredients before starting sets you up for success, no more realising that you’ve run out baking powder halfway through the recipe. It also enables you to get everything to the right temperature, such as the butter. 

  3.   "Don't freestyle too much..." - It’s a cliche to say that baking is a science but cliches are sometimes also true. If you’re following a recipe, do try and stick to the measurements and ingredients as called for. Once you understand how a recipe works you can start tweaking but until then you’ll be more successful sticking to the recipe.

5. "Salt your bakes!" - Baked goods are still food and all cooking needs seasoning. To help balance out the sweetness and to enhance flavour almost all baking can benefit from a little salt.
