Spiced Thyme Sausage Roll Recipe

Delicious Spiced Thyme Sausage Roll recipe by Chloe René, perfect for the festive season.

 

This recipe makes 8 sausage rolls.

Ingredients

  • 400g Pork Sausage Meat
  • 1 Brown Onion, finely diced or coarsely grated
  • 5g Fresh Ginger, finely grated
  • 5g Fresh Thyme, leaves picked, stems discarded
  • 15g Fresh Parsley, finely minced
  • 1 Pinch Ground Cloves
  • 1 Egg
  • 1 Tbsp Cold Water
  • 320g Puff pastry Sheet

Method

  1. Stir the sausagemeat, onion, ginger, thyme, parsley and cloves together. Crack the egg into a small bowl and whisk with the cold water.
  2. Unroll the pastry so the longest side is closest to you. Egg wash the surface, then add the filling down the middle. Meet both edges together, gently pressing onto the pastry. Use a fork to seal the edges.
  3. Egg wash the outside of the pastry. Sprinkle over some freshly ground black pepper and flakey salt. For ease, you can place the sausage roll in the fridge for a minimum of 30 mins to firm up before portioning them.

4. Preheat the oven to fan 220°C. 
5. Using a serrated knife, cut the roll into 4cm thick slices. Lay some baking paper onto a baking tray and place the sausage rolls on top, spacing them out by at least 3cm.
6. Stick the in-built food probe (available with 7000 MealAssist with SteamCrisp Pyrolytic Self Clean Built-in Oven) into the meat section of the sausage roll, making sure it doesn’t go through. Slide into the oven until the pastry is golden and the meat registers 71°C, 10-15 mins. 
7. Remove from the oven and leave to cool for a few minutes before tucking in!
